Your colleagues seem to like you, you work hard, you\u2019re blending well, you know some things I\u2019d like to see you work on but, so far you\u2019re off to a pretty good start. Right? And he said, \u201cI brought this spreadsheet here \u2018cause I wanna show you what we judge your performance on.\u201d I said \u201cOkay.\u201d I assumed it was the yellow highlight and he said \u201cYou see that line where it says \u2018liquor cost\u2019? That\u2019s your line, you own that.\u201d He didn\u2019t say you\u2019re responsible for it, he didn\u2019t say.. He said \u201cYou own that.\u201d And it\u2019s supposed to be between 19 and 21 percent. That\u2019s what we\u2019d like to see. If it\u2019s under 19 percent we\u2019re going to assume you\u2019re stealing from the customer.
