  <description> Today I welcome Jeffrey Robinson of&amp;amp;nbsp;The New Yard Restaurant&amp;amp;nbsp;and&amp;amp;nbsp;Pantry, based at beautiful Trelowarren Estate in West Cornwall.&amp;amp;nbsp;&amp;amp;nbsp;Jeff and his wife&amp;amp;nbsp;Caroline took on management&amp;amp;nbsp;of The New Yard Restaurant just over two years ago, seeking to create an&amp;amp;nbsp;exceptional dining experience founded on&amp;amp;nbsp;principles of sustainability.&amp;amp;nbsp;&amp;amp;nbsp;In 2021, they were awarded a Michelin Green&amp;amp;nbsp;Star; a coveted accolade that recognises gastronomy and sustainability within&amp;amp;nbsp;the restaurant industry.  So .. when planning for this conversation with Jeff, I was&amp;amp;nbsp;expecting to delve into all things green cooking and eating,&amp;amp;nbsp;exploring the&amp;amp;nbsp;principles and practices that underlie the way they operate.&amp;amp;nbsp;&amp;amp;nbsp;But what I wasn’t&amp;amp;nbsp;expecting, was the&amp;amp;nbsp;emphasis that they give to social&amp;amp;nbsp;considerations alongside this –&amp;amp;nbsp;namely&amp;amp;nbsp;their staff and team of people who bring the restaurant to life – which, as&amp;amp;nbsp;you’ll hear, is absolutely front and centre, alongside their eco&amp;amp;nbsp;credentials.&amp;amp;nbsp;&amp;amp;nbsp;This is a conversation about people and&amp;amp;nbsp;planet .. and I hope you’ll enjoy it as much as I did.  For breakfast with Jeff I prepared a Cornish continental-style&amp;amp;nbsp;spread, the cooked dish was ‘Smashed Purple Sprouting &amp;amp; Wild&amp;amp;nbsp;Garlic on&amp;amp;nbsp;Sourdough’ - inspired by veg garden and foraged ingredients that are available&amp;amp;nbsp;during the ‘hungry gap’. The table&amp;amp;nbsp;was also laid with locally baked bread,&amp;amp;nbsp;preserves and cheeses.&amp;amp;nbsp;&amp;amp;nbsp;You can find the&amp;amp;nbsp;recipe along with details of local growers and suppliers whose produce I used,&amp;amp;nbsp;and more information about the themes we&amp;amp;nbsp;discuss, via the&amp;amp;nbsp;Episode 13 web page.
